Reciepe Idea: Jalpur Bajra Rotla’s/ Chappatis

Ingredients:

2 Level cups of Jalpur Bajri Flour and Salt.
Method:
1. Mix together Jalpur Bajri Flour & salt and add enough water to form a stiff dough.
2. Divide dough into lime – sized balls and shape each ball into a thick and round rotla (chappati) on your hand.
3. Place on a well greased girdle or tava and continue flattening by pressing all round with the palm of hand, taking care not to break it.
4. Cook on both side on slow fire.
Serve hot smeared generously with ghee or butter.

Reciepe Idea: Jalpur Juwar Rotla’s/Chappatis

Ingredients:

Method:

Product Name: Jalpur Juwar Flour

Reciepe Idea: Jalpur Khata Dhokra

Ingredients:

200g Jalpur Dhokra Mix,
100g Sour Yoghurt (natural),
150ml Water,
1 Tbsn Salt,
1 tsp Soda-bi-carbonate,
1/4 tsp turmeric powder (haldi),
3 tbsp Oil,
1/4 tsp Asofoetida (hing) Powder,
1/4 tsp Black Pepper Powder (coarse),
1/4 tsp Red Chilli Powder,
2-3 Green Chillis,
1-2 Garlic Cloves (optional),
1/2" Piece of Ginger,
4-5 Coriander Stems Finely Chopped,
1 tbsp Fresh Lemon Juice.

Method:

1. Mix Jalpur Dhokra Flour with sour yoghurt, water, salt and turmeric powder.
2. Leave to ferment overnight or at least 6-7 hours.
3. Make a paste of green chillis, ginger and garlic
4. Now add to the batter the soda-bi-carbonate, oil, asafoetida and green chilli paste.
5. Apply a little oil to a metal thali. Pour enough batter so as to fill half the height of the thali. This should ordinarily be about 1/2 the amount for a small thali.
6. Sprinkle a little ground pepper on top
7. Sprinkle a little red chilli powder and chopped corriander on top.
8. Steam for about 10minutes.
9. Cut into square or diamond pieces and serve with raw oil and green chutney.

Product Name: Jalpur Dhokra Flour (chickpeas And Rice Flour)

Reciepe Idea: Jalpur Ondhwa
Cooking time: 40 mins
Preperation: 30 mins
Servings: 8-10 depending on size of pieces cut

Ingredients:
250g Jalpur Ondhwa Flour,
250g plain natural yoghurt
250 ml warm water
Spices for tempering:
1tsp whole mustard seeds
5-6 Curry leaves
1/2 tsp asafoetida(hing) Optional
3 tbl sp sunflower oil
Jalpur Spices for seasoning:
1tsp Jalpur turmeric powder
1tsp Jalpur chilli powder
salt to taste
2 tbl lemon juice
Other ingredints:
2 large chopped onions
1 large grated carrot
1/2 small grated marrow flesh
2tbl sp chopped fresh corriander
2tbl sp chopped fenugreek(methi) leaves optional. Double quantity of fresh corriander if not used
1tsp bicarbonate of soda
2tbl sp sesame seeds
Method:
1.Mix Yoghurt and warm water to the flour mixture and mix to a smooth batter(Use a medium size mixing bowl)
Cover and leave in a warm place for 24 hours.
2.Preheat oven to 180 degrees centigrade
Prepare alightly greased baking tin (apx 12 inches)
3.Heat the oil in a medium sized pan
Add spices for tempering
When they start to pop add the chopped onions and stir fry until translucent(apx 5 mins)
Add grated carrots ,mix well and take the pan off the heat.
4.Mix the prepared basic batter well and add the above mixture
Add the grated marrow, chopped corriander and fenugreek
Add the rest of the spices for seasoning
Mix well and taste Add salt as preffered
Finally add the bicarbonate of soda and mix well.
5.Pour the mixture into the prepared tin and sprinkle with sesame seeds
6.Bake in the preheated oven for 30 minutes and then 15-20 minutes at 160 degrees centigrade
7.Remove from the oven and cool

Cut into pieces as desired and store in covered container


Product Name: Jalpur Ondhwa Flour

Reciepe Idea: Jalpur Pakora’s

Ingredients:
1 cup (4 oz, 110 g) Jalpur Gram Flour (Jalpur Besan Flour)
1 tsp. mixed Jalpur ground spices (for example, Jalpur coriander (Dhana Powder), Jalpur cumin (Jeera Powder), Jalpur turmeric (Haldi Powder), Jalpur ginger Powder , Jalpur curry powder or Jalpur garam masala)
About 1 lb (450 g) of vegetables, cut into very small pieces (for carrots, celery, bell pepper and parsnips, prepare thin slices; for cauliflower and broccoli, cut into small florets)
Oil or ghee for frying
Method:
Mix the flour and spices. Slowly add cold water, stirring all the time, until you have a thin batter.
Heat the oil or ghee in a skillet. Dip each vegetable piece in the batter, one at a time. Make sure that it is fully coated. Drop it into the hot oil, and cook for a few minutes until crisp.
Remove the vegetable from the skillet and drain on a paper towel. Keep it warm until you are ready to serve.
